Christian Ryan named Gourmet Traveller’s 2026 Chef of the Year
Hobart chef Christian Ryan has been named Gourmet Traveller’s 2026 Chef of the Year, placing one of Tasmania’s most distinctive culinary voices in the national spotlight.
Ryan’s work reflects much of what defines Tasmania’s food culture — a close connection to place, a respect for seasonality, and the creativity to take exceptional produce somewhere unexpected. Through Aløft Restaurant and Restaurant Maria, alongside The Standard and his work with Dark Mofo’s Winter Feast, he has helped shape a dining scene that feels grounded in Tasmania while drawing inspiration from experiences and influences beyond the island.

One floor below, Restaurant Maria reveals another side of Ryan’s culinary perspective.
Inspired by the flavours, textures and convivial spirit of the Mediterranean, Maria looks to the coastlines stretching from Lisbon to Lebanon while making the most of seasonal Tasmanian and Australian produce.
The menu favours uncomplicated food with bold flavour. Fire plays an important role, adding depth and character to familiar ingredients while evoking the warmth, generosity and energy of a Mediterranean summer.
It is a different expression from Aløft, but the philosophy feels familiar — quality produce, confident cooking and hospitality designed to make people feel at home.
